Cream Cheese Frosting goes well with Carrot Cake or Red Velvet Cake. I think it is also a great filling for pastries, muffins or to accompany or layer quick breads. Its so easy to make and you can prepare a few days ahead of time and refrigerate.

Cream Cheese Frosting
Ingredients
2, 8 ounce packages cream cheese, room temperature
1/2 cup (1 stick) unsalted butter, room temperature
1 tablespoon vanilla extract (white vanilla if available)
2 1/4 cups of powdered sugar
Procedure
1. Place cream cheese and butter in the bowl of an electric mixer and beat with the paddle attachment until smooth. Add vanilla extract and beat until incorporated. Add powdered sugar in batches and beat until smooth. Refrigerate a little before using.
