Thanksgiving Leftovers Recipe Ideas

Here are some ideas of dishes you can make with your Thanksgiving leftovers:

  1. Turkey Tacos–  Make delicious turkey tacos by shredding leftover turkey meat.  Add chopped lettuce, cheese and sour cream and of course your favorite hot sauce!
  2. Sweet Potato Flan– Add 1 cup of your leftover Sweet Potato Casserole (no marshmallows) to my Vanilla Flan recipe or your favorite flan recipe and you have a great dessert! (tip: substitute lemon zest in my recipe, with a little orange zest)
  3. Turkey Stock Make turkey stock with the leftover bones once you carve the turkey.  Use My Bouquet Garni recipe to add flavor. Freeze and use for soups or rice in the future (check out Rice Pilaf, Rice with Cilantro or Jasmine Rice with Vegetables).
  4. Turkey Lasagna– Sauté about 3 cups of shredded turkey meat with some onions, green peppers, garlic and tomatoes and use this mixture to make the lasagna with Béchamel Sauce.  Also add some sautéed spinach between each layer of pasta and turkey, if you have some, and cover with shredded mozzarella! Buon appetito!
  5. Vegetable Cream Soup–  Make cream soup with the veggie leftovers and turkey stock. You can also make my Corn-Bacon Chowder recipe.
  6. Bread Pudding–  If you have leftover bread, make delicious Bread Pudding. It doesn’t matter if it is hard or if they are different kinds of bread.
  7. Turkey Panini–  The classic turkey sandwich on bagette bread is always fantastic with some swiss cheese, pickles, mayo and mustard.  Toast on sandwich press or stovetop as a panini.
  8. Turkey Pie- Make my Savory Chicken Pie recipe with leftover turkey meat pieces (use about 2 cups).
  9. Risotto– Leftover white wine can be used to make Risotto Milanese.
  10. Fromage Fort–  If you have a variety of leftover cheeses from yesterday’s cheese tray (especially bleu cheese!!), put them all in a food processor and blend adding a stream of white wine until smooth. This is a tasty cheese spread typical of France and Switzerland. It always turns out different because I use whichever leftover pieces of cheese I find in my cheese drawer (gruyere, manchego, comte, bleu, brie, goat, camembert, etc). If it gets hard again while saving in the fridge, just add more white wine.  Serve at room temperature and spread over crusty bread or crackers.

  1. We usually make sandwiches with the leftover turkey. After Thanksgiving, I don’t want to here the word “cooking” at least for few days so sandwiches seem to be the easiest way of answering the always haunting question..”what’s for dinner, mom???”

    Every year I use sweet potato leftovers (no marshmallows) to make pancakes the next morning.
